Homemade Burrito Bowls

Burrito bowls make meal prepping easy! They’re delicious and keep well for meals throughout the week.


Cilantro Lime Rice

  • 2 cups brown rice
  • salt for cooking
  • 2 tbsp fresh cilantro
  • 2 tbsp lime juice

Garlic Beans

  • 1 can black or pinto beans
  • 1 garlic clove
  • ¼ tsp cumin


  • 1 green bell pepper
  • 1 red bell pepper
  • 1 medium red onion
  • ½ tbsp avacado oil
  • ½ tsp salt
  • ¼ tsp pepper


  • Add protein of choice: chicken, beef, or shrimp.


  • fresh salsa
  • guacamole
  • cheese (optional)
  • shredded lettuce
  • lime wedge
  • fresh cilantro


Cilantro Lime Rice

  1. Cook the rice according to the directions on the package (usually for 40-45 minutes). Before water starts to boil add salt.
  2. Once the rice is cooked, place in a large bowl, let cool, and add lime juice and cilantro. Mix well.

Garlic Beans

  1. Combine all ingredients in a small pot and heat over medium heat for 5 minutes.


  1. Cut peppers and onion into strings.
  2. Heat oil in a large skillet.
  3. Add red onion to the skillet and sauté for 3 minutes over medium/high heat.
  4. Add cut peppers and cook for 5 more minutes.
  5. Add salt & pepper and continue cooking until the vegetables are slightly soft (about 2 minutes).


  1. Cook your protein and season with salt and pepper.

Assemble the Burrito Bowls!

  1. To assemble the bowls, simply divide the rice, beans and vegetables between 4 bowls and add the toppings.
